<note>Peneltian ini menggunakan rancangan acak lengkap dengan 4 perlakuan dan 3 ulangan. Perlakuan yang digunakan ialah R_0: Tepung kulit pisang tanpa fermentasi; R_1:Tepung kulit pisang difermentasi selama 7 hari;〖 R〗_2: Tepung kulit pisang difermentasi selama 14 hari; R_3: Tepung kulit pisang difermentasi selama 21 hari. Data hasil penelitian diuji menggunakan metode sidik ragam dan dilanjutkan dengan Uji Jarak Berganda Duncan. Hasil penelitian menunjukkan bahwa rataan tertinggi R3 = 13,06; R1= 12,86; R2 = 12,16; R0 = 5,09. Serat Kasar R0 = 20,06; R1 = 14,46; R2 = 13,71; R3 = 13,13. Lemak Kasar R3 = 8,75; R2 = 7,92; R1 = 7,43; R0 = 7,28. Hasil analisis ragam menunjukkan bahwa pengaruh yang sangat nyata(P<0,01) terhadap protein kasar, serat kasar dan lemak kasar. Waktu fermentasi 21 hari merupakan perlakuan terbaik dalam penelitian ini dengan kandungan protein kasar 13,06%, serat kasar 13,13% dan lemak kasar 8,75%.</note>
