Gambaran Histologi Dan Histomorfometri Otot Babi Timor (Sus scrofa domesticus)

Timor pig (Sus scrofa domesticus) is a monogastric livestock that can fulfill animal protein sources and has the potential to be developed. Pigs have the ability to convert feed which is then converted into meat and fat very efficiently. Determination of meat quality can be determined by observing the histological structure and measuring muscle histomorphometric parameters. This research was conducted with the aim of knowing the histological structure and histomorphometry of the muscles of the Timor pig. Research samples in the form of longissimus dorsi and bicep femoris muscles were obtained from three Timorese pigs at the Lili-Camplong Livestock Market. Muscle tissue was fixed in 10% formalin solution and made histological preparations and stained with HE. The results showed that the micromorphology of the Timor porcine muscle tissue was composed of muscle fibers in the form of elongated cells supported by connective tissue, arranged in parallel bundles with the direction of contraction clearly visible in the longitudinal section while in the transverse section the muscle fibers were polygonal in shape with the cell nucleus at the edges, forming many fascicles. There is connective tissue (endomysium, perimysium, and epimysium) and fatty tissue deposition. The histomorphometric parameters of the muscle tissue of the Timor pig, namely the diameter of the muscle fibers, the number of muscle fibers per fascicle, the diameter of the fasciculus and the thickness of the connective tissue in the longissimus dorsi muscle area were lower than in the biceps femoris muscle area. Muscle histomorphometry is influenced by the anatomical location of muscle and level of muscle activity, race, age, and feed/nutrition.
